The start of the holiday season is a time for festivity and food! The holidays can bring an increased temptation to indulge in traditional treats that contain excess sugar, carbs and fat. But what if there is a way to enjoy holiday classics without the extra calories? Here’s a healthy spin on a favorite holiday treat!
GUILT-FREE PEPPERMINT FUDGE
SERVES 6
INGREDIENTS
1/2 cup cup raw almonds
1/3 cup pitted medjool dates, about 6
1 tablespoon unsweetened cocoa powder
3/4 teaspoon vanilla extract
1/8 teaspoon peppermint extract
1 tablespoon coconut oil
1 tablespoon mini dark chocolate chips
1/2 cup crushed peppermints or candy cane
INSTRUCTIONS
Pulse almonds in a food processor until crunchy or sandy depending on your preference.
Add the dates and blend well.
Add the cocoa powder, vanilla extract. peppermint extract, and coconut oil. Blend for several minutes, scraping the sides to incorporate all ingredients evenly. Add a couple drops of water if necessary to help it move.
Add the chocolate chips and pulse a few final times to combine well. You don’t want to pulverize the chocolate though.
Take a tablespoon of the mixture into your hands and roll into a ball. The coconut oil will soften so it may get very messy. The warmth of your hand will allow the coconut oil to help bind the bite. You will end up pushing it more together than actually rolling it.
While it is still warm press into the crushed peppermints in a shallow dish. Place on a flat baking sheet. Repeat until all of the mixture is used up.
Set the sheet of balls in the fridge or freezer for 30 minutes to re-solidify the coconut oil.
